These kabobs aren’t like your typical kabob. They’re marinated in my special homemade Lomo Saltado spice blend. This recipe offers a healthy and easy alternative to traditional barbeque, perfect for any time of the year. Benefits of Kabob Vegetables

First, let’s talk about the star vegetables we’re using today. We have a colorful mix of sweet baby bell peppers, red onion, and Brussels sprouts.

  • Sweet Baby Bell Peppers: These little beauties are not just sweet and crunchy, but also loaded with vitamins A and C, which are great for boosting your immune system.
  • Red Onion: Red onions add a lovely tangy flavor and are rich in antioxidants, particularly quercetin, which has anti-inflammatory properties.
  • Brussels Sprouts: These mini-looking cabbages are high in fiber, vitamins K and C, and antioxidants. They help support your overall health and digestion.

The steak is a great addition to add in high-quality protein to balance the dish.

How to Prepare Veggies for Kabobs

Now, let’s prepare our veggies for the kabobs. Start by washing all your vegetables thoroughly.

  • Sweet Baby Bell Peppers: Cut off the tops, remove the seeds, and slice them into large chunks.
  • Red Onion: Peel the onion and cut it into thick wedges, ensuring they are sturdy enough to stay on the skewers.
  • Brussels Sprouts: Trim the ends and slice them in half.

How to Make a Marinade for Kabobs

Next, let’s make our flavorful marinade. We are using the same spices that I use for my Lomo Saltado. In a large bowl, combine ingredients and mix well.

How to Prepare Steak for Steak Kabobs

Now, cut your lean sirloin steak into bite-sized pieces. Add the steak and the prepared vegetables into the marinade, ensuring everything is well-coated. Let them marinate for at least 30 minutes, but if you have more time, you can marinate them for longer to enhance the flavors.

Because the steak will take a bit longer to cook, we’re going to cook it first, at a higher temperature. Preheat your air fryer to 400°F. Cook the steak pieces only for 8 minutes, then remove from the Air Fryer.

How to Cook the Kabobs in the Air Fryer

Next place the sliced and marinated veggies in the air fryer basket and cook for about 5 minutes at 380°F. You want them to be tender but still have a bit of crunch.

Assembling the Kabobs

Then it’s time to assemble our kabobs! Thread the cooked steak and cooked vegetables onto the skewers. Alternate between the different types of veggies and pieces of steak.

Ingredients

  • 1 lb sirloin cubed
  • 6 sweet baby bell peppers
  • 10 brussels sprouts
  • 1 medium red onion

Marinade:

  • 2 tsp cumin to taste
  • 1 clove garlic minced
  • 1 Tbsp ají amarillo chili paste or any chili paste
  • 2 Tbsp balsamic vinegar
  • 3 Tbsp Soy sauce
  • salt and pepper to taste

Instructions

  • Wash all vegetables thoroughly. Cut off the tops of the sweet baby bell peppers, remove the seeds, and slice them into large chunks. Peel the red onion and cut into thick wedges. Trim the ends of the Brussels sprouts and slice them in half.
  • In a large bowl, combine soy sauce, balsamic vinegar, ají amarillo chili paste (or any chili paste), minced garlic, ground cumin, salt, and pepper. Mix well.
  • Cut the lean sirloin steak into bite-sized pieces. Add the steak pieces and prepared vegetables into the marinade bowl, ensuring everything is well-coated. Let marinate for at least 30 minutes. If possible, marinate longer for enhanced flavors.
  • Preheat your air fryer to 400°F (193°C).
  • Cook the individual steak pieces in the air fryer for 8 minutes, then remove.
  • Place the veggies in the air fryer basket and cook at 380°F for about 5 minutes until tender but still slightly crunchy.
  • Thread the cooked marinated steak and vegetables onto the skewers, alternating between different veggies and pieces of steak.

Notes

You will need 4 skewers (metal or wooden) for these kabobs.
