Cauliflower Hash Browns are a great way to start your vegetable intake for the day. It also includes eggs for binding and added protein! Remember, it is important to eat at least 2.5 cups of vegetables per day.

Serving Size: 5.5 ounces
Ingredients:
9 ounces shredded cauliflower (cauliflower rice)
1 egg
2 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon cooking oil
Optional:
1 tablespoon ketchup
1 tablespoon shredded cheese
Directions:
1. Combine cauliflower rice, egg, cornstarch, salt and pepper in a bowl. Let stand for 10 minutes and discard of any liquids that may appear.
2. Add cooking oil to a large skillet and turn the heat to medium. Once oil gets hot, scoop cauliflower mixture into pan to create small circular balls. (smaller scoops for smaller hash browns, larger scoops for larger hash browns.) Scoop remaining mixture into pan but leave space between each ball. Cook for 4-5 minutes and flip each ball and press down. Cook for an additional 4-5 minutes. Cook remaining mixture, if any.
3. Serve cauliflower hash browns with an optional side of ketchup or shredded cheese.
