I love using California prunes because they are nutrient dense. They’re packed with vitamins and minerals like Vitamin K, potassium, and magnesium. These nutrients help support overall health and nutrition.

How to Make Prune Ginger Sauce
Start by making the prune ginger sauce. Use a food processor or blender to blend the prunes, warm water, vinegar, ginger, and soy sauce. Once it’s the consistency of a puree, set this mixture aside.
How to Make Chicken Veggie Stir Fry with Prune Ginger Sauce
Heat a medium skillet over medium-high heat for 1 minute. Place the oil, onion, and garlic in the skillet and sauté for about 3 minutes.
Add the ground chicken and prune sauce and mix well with the sauté. Add the salt, black pepper, celery, jalapeño, green beans, and carrots to the skillet and mix all the ingredients well. Cook for 8 minutes over medium heat or until the chicken is fully cooked.
Add the cilantro and mix well. And voila, your chicken veggie stir fry with prune ginger sauce is complete!

To enhance this stir fry even more serve with your favorite whole grain such as red, black, or brown rice. This can make the meal more satisfying with added fiber, protein, and quality carbohydrates.

Ground Chicken Veggie Stir Fry with Prune Ginger Sauce
Equipment
- Food processor or blender
- Medium skillet
Ingredients
Prune ginger sauce (Yield 6 fluid ounces)
- 10 California prunes
- 4 tablespoons warm water
- 1 tablespoon rice vinegar
- 2 teaspoons minced ginger
- 3 tablespoons low sodium soy sauce or Tamari (gluten-free)
For the stir fry (yield 6 cups with sauce)
- 1 tablespoon sesame oil
- 1 medium red onion diced
- 2 tablespoon chopped garlic
- 1 pound ground chicken
- 1 ½ teaspoons sea salt
- ½ teaspoon black pepper
- 1 30inch jalapeño seeded, diced
- 3 12-inch celery stalks, sliced
- 2 cups frozen green beans cut into pieces
- 2 cups shredded carrots
- 4 green onions green and white parts, sliced
Instructions
For the sauce
- In a food processor or blender, blend the prunes, warm water, vinegar, ginger, and soy sauce. Set aside.
For the Stir fry
- Heat a medium skillet over medium-high heat for 1 minutes. Place the oil, onion and garlic in the skillet and sauté for about 3 minutes.
- Add the ground chicken and the sauce mix well with the sauté.
- Add the salt, black pepper, celery, jalapeño and green beans, mix all the ingredients well and cook for 8 minutes over medium heat or until the chicken is fully cooked.
- Add the cilantro and the green onions and mix well. Serve warm.
