This holiday red rice bowl is a delicious recipe with one of my favorite grains – red rice!
I added a festive flair to this red rice bowl with additional flavorful and nutrient-packed veggies, golden raisins, and pecans. This recipe is full of color, and is packed with fiber and phytonutrients – a nutritious side dish for your parties.
What is Red Rice?
If you haven’t heard of it before, you may be wondering, “what is red rice?” It’s very similar to black rice, or forbidden rice, and you can find it at most grocery stores.
Red Rice Benefits
It’s packed with antioxidant-rich properties from anthocyanins. And did you know that anthocyanins can reduce the effect of a glucose and insulin spike? This is very helpful for blood sugar regulation and reaching your weight goals, especially with the mix of holiday foods.
How to Make this Red Rice Bowl
You’ll want to start by cooking your red rice according to the package or using your instant pot. You can see the beautiful red and maroon color of the grain.
Then heat up a pan, and add your olive oil, garlic, onion, sauté for about 3-5 min. Add the raisins and the veggies and sauté for another 3-5 min or until the veggies are soft. Add some of the pecans and mix well. Once the veggies are on the softer side, it’s time to mix them with your red rice.
This is packed with fiber and phytonutrients, and is a nutritious side dish for your parties. Plus, if you have leftovers, it can be a fantastic base for a meal – just add protein like fish, chicken, or lean beef.
