Ingredients

For the Marinade:

  • 2 tbsp bourbon maple syrup
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tbsp soy sauce
  • ½ cup chicken broth

For the Recipe:

  • 1 ½ pounds chicken breast cut into strips
  • 1 tbsp extra virgin olive oil
  • 1 small red onion sliced
  • 1 red bell pepper diced
  • 3 medium carrots about 6 inches each, sliced
  • 2 medium zucchini about 6 inches each, sliced
  • 3 cups fresh spinach
  • 1 cup fresh basil leaves
  • 1 cup frozen peas
  • Sea salt and pepper to taste

To Serve:

  • 3-6 cups Red rice cooked (1/2-1 cup serving based on your needs)

Instructions

Prepare the Marinade:

  • In a bowl, combine bourbon maple syrup, olive oil, lemon juice, garlic, ginger, soy sauce, and chicken broth. Whisk until well blended.

Marinate the Chicken:

  • Place chicken strips in a large bowl or zip-top bag. Pour in half of the marinade and mix to coat the chicken evenly.
  • Marinate for at least 30 minutes (longer for deeper flavor).
  • Air-Fry the Chicken:Preheat the air fryer to 380°F (190°C).
  • Remove chicken from marinade, shaking off excess, and arrange in the air fryer basket.
  • Air fry for 14 minutes, flipping halfway through, until the chicken is golden and fully cooked.

Cook the Vegetables:

  • While the chicken cooks, heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add onion, garlic, and bell pepper, sautéing for about 3 minutes until fragrant and softened.
  • Add carrots, zucchini, spinach, peas, and basil. Pour in the remaining marinade, stirring to distribute the flavors evenly.
  • Cover the skillet and let the vegetables simmer for 3-4 minutes, until tender but still slightly crisp.

Combine and Serve:

  • Add the air-fried chicken strips to the skillet and stir everything together.
  • Cook for an additional 1-2 minutes to blend the flavors. Add to the plate with rice.

Notes

Nutrition calculation uses 1/2 cup of cooked red rice.
