This freecipe is a quick, healthy, low-fat alternative to a classic banana bread recipe.
1 1/2 cups mashed overripe bananas, (about 4)
1/3 cup hot water
1 large
1 large egg white
1 cup applesauce
1 cup all-purpose flour
1 cup whole-wheat flour
1/3 cup packed brown sugar
1/3 cup granulated
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
2 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon baking soda
4 TB oat bran
Serves 16 slices
In a mixing bowl combine sugar, bananas, egg, egg whites, applesauce and vanilla. Mix on medium speed for 1 minute. Add hot water and blend for 30-45 seconds. In a separate bowl combine all the dry ingredients (flour through oat bran). Slowly add dry ingredients to wet ingredients until batter is mixed together (about 2 minutes on medium speed). Coat loaf pan with cooking spray and pour in batter. Cook in the middle of the oven at 350 degrees for 30-40 minutes. Test the center with a toothpick to make sure it comes out clean. You can also put the batter in a muffin pan and cook for 15 minutes at 350.
