Once heralded as forbidden rice grown exclusively for Chinese emperors, black rice is packed full of antioxidants. In fact, its dark color comes from its high anthocyanin content. While brown rice is good, be even more adventurous and try black rice. What better way to start than to indulge your sweet tooth while keeping it healthy!

Ingredients
1 cup dry black rice
2.5 cups water
orange peel
2 cinnamon sticks
3 cloves
pinch of salt
1 can of light coconut milk
1/4 cups of coconut palm sugar
Directions
- In a medium sized sauce pan on medium heat, add the black rice, water, orange peel, cinnamon and cloves. Bring to a boil, then lower the temperature. Let it simmer for 30-40 minutes or until the water is almost evaporated.
- Remove the orange peel.
- Add the coconut milk and sugar. Cook for 30 minutes, stirring occasionally, or until you have reached a desired consistency.
