Summer is here so lets talk about pool side and patio snacks. One snack that always seems to call my name is guacamole. But can guacamole be a superfood appetizer?
Yes it can be and that is why I am making Pichuberry Guacamole. Not only are you adding a burst of nutrition, but you are also adding a boost of flavor.
Pichuberry, from the Andes of Peru, have a sweet and tangy flavor and is bursting with antioxidants and also an excellent source of vitamin D. For a ¾ cup of fresh pichuberry, you get 39% of your daily vitamin D. Avocados are rich in anti-inflammatory, monounsaturated fats and provide you with nearly 20 vitamins, minerals and phytonutrients.

Ingredients
2 avocados, pitted and cut into smaller pieces
1 cup Pichuberry, quartered
1/2 cup red onion, diced
1/2 cup cilantro, chopped
1/4 cup lime juice
1 teaspoon salt
Instructions
Place the avocado, Pichuberry, onion, cilantro, lime juice, and salt in a bowl. Mix thoroughly until the guacamole reaches the desired chunky consistency. Enjoy!
