During this time of “shelter in place” to help prevent the spread of coronavirus (COVID-19), one thing I am doing more of is cooking… shocking!
Given everything going on, what’s not shocking is that I am finding myself making a lot of my comfort food recipes. I made beef lasagna where ground my own meat. I made ramen miso where I made the dashi from scratch by soaking the kombu seaweed for 4 hours. I also made the miso broth to go with it and even made my favorite cornbread casserole.
This time around, given that I have more time, I decided to play around and spiced up my corn casserole recipe with some Peruvian flair. The recipe came out so freaking delicious that I decided to share it with you. So, during my live segment, I will show you how to make my kickass Peruvian Style Cornbread Casserole.
