Curried Cauliflower with Chickpeas

Vegan 

A simple vegetable recipe which includes protein from chickpeas! This recipe is perfect to cook for the family or even for meal prepping.

Servings: 4

Serving Size: 1 cup

Ingredients:

1 medium head cauliflower, cored, broken into florets
1 16 oz can garbanzo beans, drained, washed
1/4 cup onions, sliced
3 tablespoon oil
2 tablespoon curry powder
2 teaspoon salt

Directions:

1. Preheat oven to 400 degrees Fahrenheit
2. Wash and dry the cauliflower
3. Place cauliflower, garbanzo beans, and onions on a baking sheet
4. In a small bowl, mix together the oil, curry powder and salt
5. Massage the oil mixture onto the cauliflower, garbanzo beans and onions
6. Bake for 20 minutes or until browned
7. Serve immediately
