I don’t know about you, but I’ve always loved deviled eggs. So for playful May, we’re switching things up a bit and instead of calling them deviled eggs, I’m making Healthy Angel Eggs!
Mother’s Day is right around the corner, and my mom is a true angel in my life. She is an incredible woman, and I’m sure you feel the same about yours. So what’s more fitting than a nutritious, tasty dish that you can share together?
I’ve partnered with Have a Plant to bring to you these delicious angel eggs with veggies.
Is There a Difference Between Deviled Eggs and Angel Eggs?
While deviled eggs and angel eggs are only different in name, this recipe uses simple ingredient swaps and adds veggies for a healthier take on your classic deviled eggs. If you’re looking for a fool-proof way to make medium or hard-boiled eggs, I suggest following this egg Instant Pot recipe.
How to Make Healthy Angel Eggs
What sets these eggs apart is the addition of finely chopped veggies, such as bell peppers, and scallions. This provides a burst of color and nutrition including vitamins, minerals, and fiber to a dish that usually doesn’t include veggies.
I’ve also replaced some regular mayonnaise with three ingredients:
- olive oil mayo
- Greek yogurt
- mustard
These ingredient swaps improve the nutrient composition with a healthier composition of fat and a little more protein without compromising the flavor.
Ingredients
- 8 hard boiled eggs peeled
- ¼ cup 2% plain Greek yogurt
- ½ avocado mashed
- 2 tablespoons olive oil mayonnaise dressing
- 2 teaspoons yellow mustard
- Veggie Toppings: bell pepper scallion, peas
Instructions
- Cut your hard-boiled eggs in half.
- Remove the egg yolks, and mix with the Greek yogurt, avocado, olive oil mayo, and mustard.
- Pipe into the egg white halves.
- Top with the sliced veggies.
Angel eggs are not only easy to make but can also be customized to suit your taste with your favorite veggies. Show your appreciation for the moms out there with something delicious and nutritious – because moms are our living angels after all!
