Vegan
This dessert is the perfect combination of all three macronutrients. We can get carbohydrates from the fruits, protein from the soy milk, and fat from the chia seeds. It will be easy to make because mangos and strawberries are available year-round in the US. Also check out the nutrition blog post on why we should include strawberries into our diet.

Serving Size: 1 cup
Ingredients:
1 cup diced mango
1 cup diced strawberry
2/3 cup soy milk
6 tablespoon chia seeds
1 pinch cacao nibs
Directions:
For the Mango layer:
1. In a blender, puree mangos and 1/3 cup soy milk until smooth
2. Pour into a cup a stir in 3 tablespoons of chia seeds
3. Chill in fridge for at least 1 hour for the chia seeds to expand
For the Strawberry layer:
1. In a blender, puree strawberries and 1/3 cup soy milk until smooth
2. Pour into a cup a stir in 3 tablespoons of chia seeds
3. Chill in fridge for at least 1 hour for the chia seeds to expand
To assemble the pudding:
1. Pour mango mixture into two cups
2. Layer with additional diced mango
3. Pour strawberry mixture on top of diced mangos
4. Layer with additional diced strawberries
5. Sprinkle with a pinch of cacao nibs
