A few years ago our good friends invited us over for breakfast and served us “Shakshuka”. That was my first time ever tasting this delicious dish. Somehow I got up this morning thinking “Shakshuka” and 20 minutes later… TA DAAA! Looking good Shakshuka, you sure taste scrumptious. This egg dish can be served with polenta, bread, or just simple by itself! It is a quick, light, healthy and nutritious meal that everyone can enjoy at breakfast, lunch, or dinner. Shakshuka
Serves 2 – 3
Ingredients:
1 Tbsp olive oil
1 white onion, chopped
2 garlic cloves, chopped
1 16oz can of tomato sauce
3 tomatoes, sliced
5-7 eggs
1 tsp oregano
1 tsp thyme
Directions:
- Sautee 1 tablespoon of olive oil
- Add onion, garlic, and herbs until ingredients are translucent. Add tomato sauce and stir
- Let simmer for 2 minutes
- Crack desired amount of eggs over tomato mix
- Place sliced tomatoes on top and cover
- Cook on low heat for 10-15 minutes, do not stir
- Sprinkle parsley and serve
