cooked (1/2-1 cup serving based on your needs)
Instructions
Prepare the Marinade:

In a bowl, combine bourbon maple syrup, olive oil, lemon juice, garlic, ginger, soy sauce, and chicken broth. Whisk until well blended.
Marinate the Chicken:
▢
Place chicken strips in a large bowl or zip-top bag. Pour in half of the marinade and mix to coat the chicken evenly.
▢
Marinate for at least 30 minutes (longer for deeper flavor).
▢
Air-Fry the Chicken:Preheat the air fryer to 380°F (190°C).
▢
Remove chicken from marinade, shaking off excess, and arrange in the air fryer basket.
▢
Air fry for 14 minutes, flipping halfway through, until the chicken is golden and fully cooked.
Cook the Vegetables:
▢
While the chicken cooks, heat 1 tbsp olive oil in a large skillet over medium heat.
▢
Add onion, garlic, and bell pepper, sautéing for about 3 minutes until fragrant and softened.
▢
Add carrots, zucchini, spinach, peas, and basil. Pour in the remaining marinade, stirring to distribute the flavors evenly.
▢
Cover the skillet and let the vegetables simmer for 3-4 minutes, until tender but still slightly crisp.
Combine and Serve:
▢
Add the air-fried chicken strips to the skillet and stir everything together.
▢
Cook for an additional 1-2 minutes to blend the flavors. Add to the plate with rice.
Notes
