Wash all vegetables thoroughly. Cut off the tops of the sweet baby bell peppers, remove the seeds, and slice them into large chunks. Peel the red onion and cut into thick wedges. Trim the ends of the Brussels sprouts and slice them in half.
In a large bowl, combine soy sauce, balsamic vinegar, ají amarillo chili paste (or any chili paste), minced garlic, ground cumin, salt, and pepper. Mix well.
Cut the lean sirloin steak into bite-sized pieces. Add the steak pieces and prepared vegetables into the marinade bowl, ensuring everything is well-coated. Let marinate for at least 30 minutes. If possible, marinate longer for enhanced flavors.
Preheat your air fryer to 400°F (193°C).
Cook the individual steak pieces in the air fryer for 8 minutes, then remove.
Place the veggies in the air fryer basket and cook at 380°F for about 5 minutes until tender but still slightly crunchy.
Thread the cooked marinated steak and vegetables onto the skewers, alternating between different veggies and pieces of steak.
