Instructions
In a blender or food processor, add the cottage cheese, honey (or maple syrup), and vanilla extract and strawberries. Blend until the mixture is smooth and creamy.
Add in the mixture dark chocolate pieces and mix well.
Pour in the mixture into a freezer-safe container.
Cover the container with plastic wrap or a lid and place it in the freezer. Freeze for at least 4 hours or until the mixture is firm, stirring every hour to break up ice crystals and ensure a smooth texture.
Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly.
