Instructions

Preheat the oven to 425 degrees.
▢
Cut bell peppers in half and remove seeds.
▢
Roast the bell pepper halves until they're tender – about 20-25 minutes.
▢
Fill with cottage cheese, top with diced tomatoes and fresh basil, and season with salt and pepper.
